Recipe Wednesday: Classic Tuna Melt

I love being home and making a great lunch.  I was dying for a tuna melt this week, and I was so happy to find I had one can of Trader Joe’s Albacore Tuna in my cabinet.
So I brought out some mayo, whole grain mustard, salt, pepper, and green onions and whipped up some fabulous tuna salad.

Next I spread it on some amazing ciabatta bread, topped it with some sharp cheddar cheese, and popped it into my toaster oven.  I toasted it for about 5 minutes, just until the cheese was melty.
Of course, Leo was begging to share!  Buttttt, I said no.  
This lunch is the perfect make for a hot summer day, light ingredients, light taste & takes under 15 minutes to whip up.  Try it out!
